Iberico Spare Ribs Pork are taken from the upper rib section of the Iberico pig, including both older and younger ribs. Depending on the proximity to the bone, the meat ranges in color from pale pink to deep pink. The lean meat and fat are perfectly interspersed, resulting in tender, fatty meat that remains juicy and flavorful during cooking, without drying out.
The Iberico pig is a black breed native to Spain, raised in a free-range environment and fed acorns and olive tree remnants. This diet gives Iberico meat its fine, firm texture, marbled with rich fat veins. It also contains a high level of oleic acid (omega-9), which is beneficial for health, helping reduce the risk of cardiovascular disease, control blood sugar levels, and improve good cholesterol while lowering bad cholesterol.
