Prepare the Marinade: In a bowl, mix together the tomato paste, ketchup, Worcestershire sauce, soy sauce, brown sugar, gochujang, sesame oil, water and pepper.
Marinate the Meat: Add in the pork ribs and mix to coat evenly. Marinate for at least an hour or preferably overnight.
Roast: Preheat the oven to 160 degrees Celsius. Place the ribs on a foil-lined baking pan. Place in the oven and roast slowly, basting occasionally with the extra marinade, till glazed and tender.
(*) Stove-top Method (If no oven is available): Place the ribs and marinade in a pan, add a little water, cover and cook over low heat until the ribs are tender and the sauce thickens, coating the ribs evenly.
Assembly: Remove and serve with lettuce, pickled vegetables and extra cooked marinade. For a professional touch, garnish with toasted sesame seeds or chopped green onions.
