U.S Pork Ribs are a long cut that starts from the lower belly of the pig, consisting of 11–13 ribs. Pork ribs are usually flat and contain more bone than meat. However, they also have quite a bit of fat, which makes them tender. Since American pigs are fed with corn, U.S. pork ribs have thick, tender, juicy meat with a naturally sweet and fragrant flavor when cooked. They are strictly inspected and controlled by the Food Safety and Inspection Service of the United States Department of Agriculture (USDA).
