Paysan Breton's Bleu d'Auvergne holds AOP certification and features a creamy ivory color, dotted with bluish-green mold spots from Penicillium Roqueforti, giving it characteristic green-blue veins. It has a spicy, salty flavor with natural aromas of grass and herbs.
