Ingredients

MAIN INGREDIENTS
300 - 350g Canadian Top Blade (cut into 2x2cm cubes)
1 small piece (100g) Onion peeled, washed, and cut into wedges
50g Green/red/yellow bell peppers (wash, remove seeds, cut into square pieces similar to beef)
4–5 cloves Garlic, peeled, crushed, and finely chopped
MEAT MARINADE INGREDIENTS
1 tbsp Oyster sauce
1 tbsp Soy sauce
1/2 teaspoon Sesame oil
1 teaspoon Sugar
1/2 teaspoon Ground pepper
1 teaspoon Cornstarch or tapioca starch
2 cloves Minced garlic
SAUCE INGREDIENTS
2 tbsp Ketchup
1 tbsp Chili sauce
1 tbsp Soy sauce
1.5 tbsp Sugar
1 teaspoon Rice vinegar
3-4 tbsp Water
1 teaspoon Oyster sauce
1/2 teaspoon Ground pepper
OTHER SPICES AND INGREDIENTS
3-4 tbsp Oil
15g Unsalted butter
As needed Lettuce, cucumber, tomato (to serve with)
As needed Coriander (garnish)

Instructions

STEP 1 | PREPARE AND MARINATE THE BEEF
  • Rinse the beef thoroughly and pat completely dry with paper towels. Cut the beef into 2×2 cm cubes.
  • Place the beef in a bowl and add all meat marinade ingredients: oyster sauce, soy sauce, sesame oil, sugar, seasoning powder, ground pepper, cornstarch, and minced garlic.
  • Mix well and gently massage the beef to absorb the marinade. Let it marinate for at least 30 minutes at room temperature, or 1–2 hours in the refrigerator.
STEP 2 | PREPARE VEGETABLES AND MAKE THE SAUCE
  • Make the sauce: Add all sauce ingredients into a small bowl, stir well until the seasonings are dissolved. Taste and adjust the balance of sweet, sour, salty, and spicy to your preference.
  • Prepare the onion and bell pepper as directed in the ingredients section.
STEP 3 | STIR-FRY THE BEEF
  • Heat a large pan over high heat, add 2 tablespoons of cooking oil and heat until lightly smoking.
  • Add the minced garlic and sauté until fragrant.
  • Add the marinated beef and stir-fry quickly over high heat for about 1–2 minutes until the beef is just cooked and slightly seared on the edges.
  • Transfer the beef to a separate plate, leaving the meat juices in the pan.
STEP 4 | STIR-FRY VEGETABLES AND FINISH THE DISH
  • Using the same pan, add 1 tablespoon of cooking oil and a knob of unsalted butter if the pan is too dry.
  • Add the minced garlic and sauté until fragrant.
  • Next, add the onion and bell pepper, stir-fry quickly for about 1–2 minutes until just tender but still crisp.
  • Pour in the prepared sauce, bring to a gentle boil, and stir to combine.
  • Return the beef to the pan, toss everything together until the beef is well coated with the sauce.
  • Taste and adjust the seasoning one final time to your liking.
