Ingredients

1kg 3/8″ Regular Cut Fries
340g Ground beef
6 cloves Garlic
3 tablespoons Fish sauce
1 tablespoon Sugar
120ml Beef or Chicken stock
5 Thai basil leaves
Green or Red bird's eye chili, as desired

Instructions

Step 1: Prepare fries according to package instructions. Set aside and keep warm.

Step 2: In a mortar and pestle, pound bird’s eye chilies into a fine paste. Add garlic and stir in the mild red chilies, creating a rough paste.

Step 3: Heat a large work or skillet over high heat with some oil. Add ground beef and cook until brown. Keep stirring until all e1cess liquid is evaporated, leaving only beef fat. Stir and toss until the beef is evenly brown and flavorful.

Step 4: Turn the heat to medium and add about 1 tbsp of oil, pushing the beef to the side. Saute the chili mi1ture in the oil for about 10-20 seconds until aromatic. Then, toss it together with the ground beef on high heat.

Step 5: In this stage, add in stock, fish sauce, and sugar. If the mi1ture is too dry, add more stock or water. Adjust to taste.

Step 6: Turn off the heat and stir in basil leaves.

Step 7:To serve, place warm fries on a serving dish and generously top them off with the beef stir-fry. Enjoy!
