Wagyu Cross Beef Rib Cap A3 is located on top of the head portion of the striploin. It is a rare and highly sought-after cut, as it represents the smallest portion of the cow. This boneless meat has a rich, thick fat cap, minimal lean muscle, and is incredibly tender, with a rich, flavorful taste that is both creamy and succulent.
Wagyu beef is graded from A1 to A5, with A3 representing a moderate quality. The meat has a medium red color and a balanced distribution of marbled fat between the lean muscle. It has a firm texture, and after cooking, it retains its tenderness and moisture without becoming dry.
