On March 19, The Gourmet Affair, hosted by New Viet Dairy exclusively for HORECA partners and F&B businesses in Central Vietnam, concluded on a high note, delivering inspiration and memorable experiences.

Culinary highlights through live cooking showcases

As a key highlight of the event, live cooking showcases by two experienced chefs captured strong interest from attendees, offering a vivid demonstration of creativity and technique.

  • Slow Sous-Vide Australian Black Angus OP Ribs with Raclette: Chef Nguyen Van Tu – Iron Chef Vietnam applied slow-cooking techniques to preserve the tenderness and rich flavor of the beef, paired with melted Raclette cheese to create a well-balanced and indulgent dish.

  • Aburi Coho Salmon “Saku” Tataki: Under the interpretation of Chef Nghiem Minh Duc – New Viet Dairy Gastronomy Consultant, the salmon was lightly seared to retain its natural richness, complemented by the gentle acidity of passion fruit and the subtle warmth of ginger, resulting in a refined and distinctive flavor profile.

Through these live-prepared dishes, attendees were able to clearly experience the quality of the ingredients while gaining inspiration for practical menu applications within their businesses.

Following the cooking showcases, the product display area offered a more comprehensive view of New Viet Dairy’s ingredient portfolio.

Coho salmon also remained a highlight, with its natural red color, firm texture, and balanced richness—ideal for multiple preparations, from sashimi to modern fusion-style grilled dishes.

Alongside imported wines and a diverse range of juices, the combination of Oatly oat milk and Zhejiang matcha stood out as a key highlight, representing the growing plant-based beverage trend. This pairing not only delivers a balanced and approachable flavor but also provides HORECA businesses with flexible menu options to meet evolving consumer preferences.
