On June 27, 2025, New Viet Dairy, in collaboration with its supplier partner AquaChile, organized a specialized Aqua Salmon Training & Tasting session at Stix Restaurant, Ho Chi Minh City. This important activity was part of the company’s internal training plan, aiming to equip the sales team with in-depth product knowledge, a better understanding of the market, and clear distribution strategies to serve customers in the F&B, retail, and processing sectors more effectively.

  • An optimized farming cycle of only 18–20 months, shorter than Atlantic Salmon (~30 months), ensuring consistent meat quality and a naturally appealing red color (score 28–34). 
  • Rich in Omega-3, Omega-6, and DHA, with firm, low-fat flesh suitable for sashimi, sushi, grilling, steaming, or smoking. 
  • A reliable supply chain that remains stable even during low fresh fish seasons (March to June) thanks to extensive seawater farms and proactive harvest planning. 
  • International certifications: ASC, BAP, GGN, Halal, and Parve, ensuring high food safety standards and transparent traceability.

During the Training & Tasting session, participants sampled a range of Aqua salmon dishes prepared as sashimi, grilled, or in salads, experiencing firsthand the bright red flesh, natural sweetness, firm texture, and low-fat profile that distinguish Coho salmon.

A highlight of the session was the live demonstration of whole Coho salmon filleting. A professional chef showcased techniques for scaling, head and body processing, belly and fin trimming, precise filleting, and bone removal. This practical demonstration enabled the sales team to better understand the fish’s structure and the popular cuts, equipping them to confidently present and recommend products to customers.

The training also included an interactive Q&A session with AquaChile representatives. Practical questions about competitive advantages, product applications, storage and transportation processes, and sales support policies were addressed in detail. This exchange provided valuable real-world insights and strengthened the team’s confidence in sharing product knowledge with customers and partners.
