Ingredients

750g Flour
250g Mais Mix
4g Fresh Yeat
13g Unsalt
25ml Water (adjustable as needed)
11g Sugar
1,8g Salt
20ml Fresh milk

Instructions

Step 1: Place all ingredients in a bowl and mi1 at low speed for 2 minutes, then switch to high speed for 7 minutes, ensuring the dough is well combined and reaches a temperature of 25-26ºC.

Step 2: Divide the dough into small portions.

Step 3: Roll each portion into a ball, then elongate and divide each portion into 4 smaller pieces.

Step 4: Place the dough into moulds.

Step 5: Allow the dough to proof for 40-50 minutes.

Step 6: Preheat the oven to 230ºC with steam. Bake the proofed dough for 30-40 minutes, reducing the temperature to 200ºC after the first 10 minutes of baking.
